Weekend Cooking - Gooseberry Patch Quick and Easy Christmas

Now that the holiday season is in full swing, there is less time than ever to fix anything to eat (at least around my house, that it is!)

To the rescue comes the Gooseberry Patch folks with their latest book, "Quick and Easy Christmas."



This spiral-bound cookbook is full of over 220 recipes from cooks from all over the country that are great for the holidays, or any other time that you need something quick and easy to fix.  Plus they have added tips and ideas on holiday decorations, crafts, and gift ideas as well.

Divided into six sections (Breakfast and Brunch, Snacks and Appetizers, Soups, Sides and Salads, Mains, Desserts and Slow Cooker), it is easy to find something yummy and fast to satisfy the entire family.

Here is one recipe I intend to try this Christmas -



EggNog Cake

18-1/4 oz. pkg. yellow cake mix with pudding
3 eggs, beaten
1/3 c. oil
1 t. nutmeg
1-1/3 c. eggnog

In a large bowl, blend together all ingredients until smooth. Pour into a Bundt® pan that has been sprayed with non-stick vegetable spray. Bake at 350 degrees for 45 to 55 minutes, until a cake tester comes out clean. Cool on a wire rack 10 minutes. Transfer to a nice plate. Drizzle Eggnog Glaze over cake. Makes 12 servings.

Eggnog Glaze:
2 c. powdered sugar
2 T. margarine, softened
1 t. vanilla extract
3 to 4 T. eggnog

In a medium bowl, combine all ingredients except eggnog. Add enough eggnog to reach a glaze consistency.

I'm a huge eggnog fan, but I think this is the first recipe I've ever seen that uses it in a cake. I'll have to give it a try. I like the idea of using a cake mix, too. While I'm usually all about baking from scratch, cake mixes DO make things much quicker.

Another eggnog lover...hmmm..that glaze might be nice with a little rum or brandy, just like I like my eggnog. :-)

Wow! I can't believe that x-mas is drawing nearer. Here in the Netherlands we only start halfway December or so. I never had eggnog in my life and I have no idea what it tastes like.

I like eggnog (with a little whiskey) once or twice during the season. Good holiday in this one.

I'm another big eggnog fan. I love the limited edition eggnog ice creams that come out this time of year. I even found an eggnog flavored seltzer this year that is really good (even though the sound of it is rather odd I know).

*spiral bound* I swear, even though it's the first criteria I disregard, it's always the first thing I look for in a cookbook.
