So I was thrilled to be asked to review Gooseberry Patch's cookbook "Rush-Hour Recipes."
Filled with over 200 recipes for quick, easy and delicious recipes, this book would be invaluable to that mom-on-the-go, or anyone who just wants to fix wholesome, filling meals without spending hours doing so.
The categories in this cookbook are broken down into six sections - 5-Indgredient Favorites, One-Dish Dinners, Slow Cookers To The Rescue, Soup's On, Make-A-Meal Sides, and Speedy Potluck & Party Foods.
Here is one recipe that caught my eye, so we gave it a whirl. It was easy, and delicious!

1 lb. ground beef
1 onion, diced
1/2 red or green pepper, diced
1 c. long-cooking rice, uncooked
14-1/2 oz. can diced tomatoes
3 c. water
2 t. chili powder
1 t. paprika
salt and pepper to taste
In a skillet over medium heat, brown beef with onion and red or green pepper; drain. Stir in uncooked rice and remaining ingredients. Cover and simmer over low heat for about 25 minutes, until water is absorbed and rice is tender. Makes 4 to 6 servings.
