My sweet husband has recently become obsessed with gooey butter cakes. He first saw one at the grocery store, a Paula Deen brand one that was wayyy too expensive for that week's grocery budget. Then a while later, we found one on their "day old" rack, and took it home to try it.
Oh my lord - it was like nirvana in a cake! It was soo good and rich! So, naturally, we had to figure out how to make them at home.
There are tons of recipes out there for all different kinds of gooey butter cakes. This is the original recipe that we tried that I found on www.cooks.com
|GOOEY BUTTER CAKE|
1 pkg. yellow cake mix
1 stick (1/2 c.) butter
Mix together cake mix (just the mix, not the other ingredients called for on the box) with butter and 1 egg. Pat into an ungreased 9x13 inch cake pan.
1 (8 oz.) pkg. cream cheese, softened
1 (1 lb.) box confectioners' sugar
1 tsp. vanilla
Cream together cream cheese, 2 eggs, powdered sugar and vanilla. Pour over cake mixture, spreading to the edges.Bake at 350°F for 35 minutes.
And then, seeing as how we can never leave a good thing alone, we begin to experiment a bit. "How would this taste with chocolate?" Well, everything is better with chocolate and boy-howdy, is this chocolate gooey butter cake a delight for the taste buds!
We just added about 1/2 a cup of cocoa powder to the "gooey butter" part, and switched out the yellow cake mix for a chocolate one.
Swoon! It is sooooo good!
Don made one for Thanksgiving, and as our two middle sons couldn't make it to our house (they had to work!) we packed some cake up along with other dinner items and sent them back with my oldest son.
A phone call later that evening went a little like this:
"What are those brownie things you sent? I can't stop eating them!!"
Pretty successful, I'd say!
Now, wonder what other flavors we can experiment with???
